Vegan Cheesecake Overnight oats

As you can see on my blog- breakfast recipes are very essential for me. I am a breakfast person. 🙂 I cannot go without breakfast, since that would turn me into a grumpy person. And let me tell you- nobody wants that. 😀

This recipe for vegan cheesecake overnight oats combines three of my favorite ingredients: oats, greek yoghurt and lemons. I looove oats, especially since I know how good these are for you and I simply love greek yoghurt, mainly due to its incredible texture. And lemon zest in a bake or in a dessert can transform the whole dish onto another level.

So…vegan Cheesecake overnight Oats for breakfast! Is there a better way to start the weekend, than with these creamy cheesecake oats? 🍋

 not really! These are soo delicious!

RECIPE

  • 70 grams of (pulsed) oats
  • 1 tsp of chia seeds
  • 150 ml of almond milk
  • 1/2 tsp to 1 tsp of agave syrup(according to your taste)
  • A little bit of ground vanilla beans

Mix this together in a bowl and put it in the fridge overnight. You can prepare the cheesecake topping right after or you will prepare it the next morning.

Cheesecake topping

  • 100 ml of vegan yoghurt / alternatively Greek yoghurt
  • 1/2 tsp of lemon zest
  • 1.5-2 tsp of coconut blossom sugar/ another sweetener
  • some more ground vanilla beans

Stir this together and top your overnight oats with this.
Then top with vegan cookies or butter cookies. Raspberries go perfectly with this!!

These vegan cheesecake overnight oats are incredibly delicious and such a nice variation for your breakfast routine. I hope you will give these a try.
