Pistachio Tartlets

These pistachio tartlets combine everything I want from a dessert. Silky mousse, crunchy pastry, chocolate and fresh fruit. The pistachio mousse is very dangerous. You might end up eating this by the spoonful!

Dough

  • 250 grams of flour
  • 125 grams of butter
  • 40 grams of brown sugar
  • 1 egg
  • 1/2 tsp of vanilla extract
  • Pinch of salt
  1. Mix all the ingredients in a blender or mixer, shape into a ball and cover in cling film. 
  2. Cool for 30 min in fridge. 
  3. Prepare the pistachio mousse. 

Pistachio Mousse

  • 18 grams of sugar
  • 2 grams of vanilla sugar
  • 13 grams of pistachio butter
  • 125 grams of heavy cream
  • Pinch of salt
  • 60 grams of mascarpone cheese 
  • Optional: green food coloring
  • Optional: 1/2 package of cream stiffener
  1. Whip up the cream until fluffy.
  2. Combine the pistachio butter, the mascarpone, the sugars and the salt. 
  3. Add this to the whipped cream and mix again. 
  4. If you prefer a greener mousse, you can add     a couple of drops of food coloring. 
  5. Roll out the dough on a floured surface, transfer pieces of dough into the pastry rings. Preheat oven to 180 degrees. Bake for 18-20 minutes until golden brown. 
  • 30 grams of white chocolate 
  • Raspberries 
  1. Melt the white chocolate and transfer these to the bottom of the tartelettes. 
  2. Top with the pistachio mousse and fresh raspberries.
