Vegan protein peanut butter energy balls
My husband has been working out a lot and he wanted to increase his protein intake. This was the perfect opportunity for me to created some delicious energy balls.

These are really delicious and the whole batch has 25 grams of protein. So these are perfect as a pre- or post workout snack. Just the right amount of sweetness and a delicious truffle- like texture. My kids love these, too.
You can make these with or without chocolate coating. I like them either way. 😋
Recipe for 20 protein peanut butter energy balls
- 65-70 grams of dried, pitted dates
- 35 grams of (gluten-free) oats
- 15 grams of walnuts
- 40 grams of peanut butter from Prozis
- 30 grams ( vegan) protein powder from Prozis
- 2.5-3 tbsp of water
- 1/2 tsp cinnamon
- 1 tsp of vanilla extract
- 1/2 tsp of chia seeds
- Pinch of salt
- 50 grams of (vegan) dark chocolate for coating
- Add all the ingredients into a blender, with just 2 tbsp of water. Mix everything on high speed until you have a paste- like consistency (just a couple of seconds). Check the texture and add 1/2 or 1 more tbsp of water, until the consistency is like a truffle.
- Roll these into balls, taking little pieces of the batter – one after the other.
- Melt the chocolate over a double boiler or in the microwave.
- Coat the energy balls and keep them in the fridge for 5-8 days.
- You could also freeze these.
