Refreshing Strawberry cheesecake Oats
It’s strawberry season and this means, we get to eat strawberries in and on everything. đ This made me think of an upgrade for my lemon cheesecake oats, which you can find here:
Vegan Cheesecake Overnight oats – Happinessineverybite
This is a delicious recipe for a wonderful breakfast or just as a nice, healthy afternoon snack. My oldest daughter actually requested this as an afternoon snack the other day. She had tried this for breakfast and said she needed another portion as a snack in the afternoon. Said and done. đ
Since I had made some strawberry purée for the breakfast, it was easy to just mix it all together and enjoy it on the patio in the afternoon. Refreshing strawberry cheesecake oats. YUM! Breakfast can be really fun and soo delicious! So here is what you need!
Recipe for 1 bowl or two little jars of strawberry cheesecake oats
- 70 grams of (pulsed) oats
- 1 tsp of chia seeds
- 150 ml of almond milk
- 1/2 tsp to 1 tsp of agave syrup or another sweetener (according to your taste)
- A little bit of ground vanilla beans
Mix this together in a bowl and put it in the fridge. You can prepare the cheesecake topping and the strawberry purĂ©e right after and then eat this right away. Or you could prepare all of this and eat it the next morning. I like to eat mine right away đ
Strawberry purée
- 100 grams of strawberries
- 1/2 -1 tsp of vanilla sugar
- 2 Tbsp of water
Wash the strawberries and add these, together with the water and the sugar to a little pot. Bring this to a boil and then reduce the heat, so the mixture is bubbling slightly. Lightly squish the strawberries with a wooden spoon, so the juices are getting out. Cook on medium heat for about 4 minutes. Use a hand blender to purée this mixture. If you want the purée to be extra fine, you can transfer this through a sieve. Otherwise you can just let this cool down in the pot, until you have prepeared the cheesecake topping.
Cheesecake topping
- 100 ml of vegan yoghurt / alternatively Greek yoghurt
- 1/2 tsp of lemon zest
- 1.5-2 tsp of coconut blossom sugar/ another sweetener
- some more ground vanilla beans
Mix this together until the sugar has completely dissolved.
Now you can mix everything together:
Take the bowl – or the two jars with the oats, top it with a generous layer of strawberry purĂ©e. and then top this with the cheesecake layer. To make this treat extra delicious I topped all of this with some cut up strawberries and some crumbled up digestive cookies. This adds another yummy flavor and a little crunch to this bowl.
