Fudgy Lotus Brownies

So instead of presenting a classic brownie recipe, I am presenting here my brownie recipe with a highlight! These are brownies in combination with seasoned speculoos for an extra flavor. As an alternative to speculoos you can easily use Lotus Biscoff Cookies- since the taste is rather similar and you can get these all-year-long.

The good thing about this recipe is that you can decide how strong the flavor of the add-ins (speculoos or Lotus cookies) shall be – due to the amount of speculoos/ lotus cookies you add.

Recipe for fudgy lotus brownies

  • 200 gr dark chocolate
  • 200 gr non salted butter
  • 3 eggs
  • 230 gr of white sugar
  • 1 package of vanilla sugar
  • 1/2 teaspoon of vanilla extract
  • A pinch of salt
  • 90 gr of flour
  • 35 gr of cocoa
  • 75 -100 gr of speculoos/ lotus cookies

Instructions

Melt the chocolate & butter and set aside. Then mix the eggs, sugar and vanilla until creamy- about 1 or two minutes. Now you can carefully add the chocolate & butter and fold it in. Be aware, that the melted mixture should not be too hot! We don’t want to boil the eggs with the warm butter.:) You can now add the dry ingredients and mix everything until you have a smooth batter.
Line a 25 x 20.5 cm tin with parchment paper and preheat your oven to 180 degrees. Now, pour the batter into the prepared tin until the bottom of the tin is covered.
As a next step, you can get half of the speculoos/ lotus cookies out and crumble these up – into pieces. Spread these onto the brownie layer. Once you have done that, add another layer of brownie batter on top. Then crumble the remaining speculoos/ lotus cookies and spread those on top of the second brownie batter -layer. Top this with the remaining batter. Bake the brownies for 30- 35 minutes. A wooden stick should come out clean, at the end of the baking time. But be careful not to overbake the brownies or these will become dry. We will let the brownies cool in the tin for at least 10 minutes. These will then firm up a little bit.

After the brownies have cooled down, you can cut these into shapes and start decorating. For christmas I cut these into triangles and added a candy cane as a christmas tree trunk. Usually I cut the brownies into squares or rectangles.

I topped my brownies with a chocolate frosting and added sprinkles – I have kids in my house, so sprinkles are very present in my bakes. 🙂
