Fruity nectarines galette with almond paste

I am very allergic to stone fruit, so we usually do not have a lot of that in the house. But the other day I thought, the girls should try nectarines, since these are the perfect summer fruit. Juicy, sweet, a little tart. And so full of flavor. So I introduced it to the girls and my oldest might have an allergy against stone fruit as well. Grr. My youngest turned out to not really liking it. Yippieh. So I had a lot of nectarines on my hands and had to find a way to use up these wonderful fruits. Tadaa. A perfect reason to bake something with these delicious nectarines.

Cool fact: I can eat stone fruit, which has been cooked or baked. My oldest daughter could eat it, too. Let’s get back to that later.

So… Galettes! A galette is such a wonderful bake. You can just prepare the dough, fill it with fruits and fold it up. It absolutely depends on your mood, your time and how creative you are feeling that day. Anything is possible. You don’t even need a specific baking pan for this one. Galettes are great!

Recipe for 1 fruity nectarines galette with almond paste

  • 200 grams of flour
  • 50 grams of ground almonds/ almond flour
  • 120 grams of cold butter
  • 45 grams of brown sugar
  • 1/2 tsp of vanilla extract
  • 1 egg
  • 1 pinch of salt
  • 1-2 tbsp of ice cold water(optional) I usually use one Tablespoon.

Combine everything into a dough – except the cold water. You should work rather quickly, so the butter does not melt. There can and there shall still be pieces of butter in the dough. Add some ice cold water to help the dough firm up a little better. Shape the dough into a ball, cover it in clingfilm and store the dough in the fridge for 30 -60 minutes. The cooling time is necessary for the dough, so don’t skip this step.

Curd & Almond paste layer (optional)

I prepared a layer of curd, almond paste, vanilla and lemon zest and it made the galette a lot better. I loved this sweet, tangy layer, which was the base for the nectarines, to lie on. Delicious!

If you want to add this layer you need:

  • 65 grams of almond paste
  • 100 grams of curd (20 % fat)
  • 1/8 tsp of vanilla extract
  • 1/4 -1/8 tsp of lemon zest

Combine all of this in a bowl. You have two options here.

You can either- freeeze the almond paste and grind it, so you have finer pieces of almond paste. Or you simply mix everything together and live with bigger and smaller pieces of almond paste in the curd layer. I have tried both options. Both work out just fine.

4-5 nectarines

Wash and cut up the nectarines and put aside- until the dough has cooled down enough. Preheat the oven to 200 degrees. Roll out the cooled dough on a floured surface – between two baking sheets. Roll out the dough into the shape of a circle. You can neatly cut the edges, or simply leave them as they are.

Now you can add the curd layer- if desired. We really liked this, because it was such a good combination with the crispy dough and the juicy nectarines. Leave some room around the edges, so you can flip this over later. Add the nectarines, or even any other kind of fruit and fold the edges of the dough over.

  • 1 Eggyolk
  • 1 Tbsp of Milk

Combine this in a glass and brush the crust with the egg wash.

  • ~4 tbsp of flaked almonds
  • 1-2 tsp of brown sugar

Now you can sprinkle the crust with brown sugar and flaked almonds.

Bake for 25- 30 minutes until golden brown. The perfect way to eat galette is to enjoy this warm with a scoop of ice cream. I brought this over to a friend’s house for a spontaneous barbecue and it was the perfect summer dessert.
