Homemade Marzipan
It‘s this time of year, when Marzipan can be found in cookies and all sorts of bakes. This flavorful almond paste adds a unique flavor, which I absolutely love! I have forgotten to buy Marzipan at the store so many times, when I wanted to bake something and had to run to the store a second time- in order to buy Marzipan for the specific recipe. The wonderful thing is, you only need three main ingredients to make it yourself. And it‘s actually super easy to make!
Recipe for 185 grams of homemade Marzipan
- 110 grams of ground almonds
- 70 grams of powdered sugar
- 10 drops of bitter almond extract
- 1 tbsp & 1 tsp of water
- A pinch of salt
Optional add ins:
- Rose water/ substitute this for the amount of regular water
- 1/4 tsp of orange zest
- Amaretto for a stronger almond flavor ( use half water & half amaretto)
Put the almonds and the powdered sugar into a food processor. Mix these two together, add 1 tbsp of water and the almond extract. Let the foodprocessor pulse it a couple of times until it‘s creamy. Add the remaining 1/2 tbsp of water Pulse again. Knead this with your hands on a clean surface and form a log with it.
Transfer to an airtight container or wrap it up in cling film. This can be stored in the fridge for two weeks.
You can use it as a wonderful addition to cakes, cookies, waffles, homemade truffles…… anything.
