Fluffy, flavorful babka
A wonderful bake for Mother’s Day! Fresh, fluffy babka, in a heart shape to show your appreciation for your mom and all the work, effort and love.
This Babka is super easy to prepare and super delicious. The kids didn’t like it. They looooved it. The greatest thing about babka is, that you can just eat it with everything. Something sweet like marmelade, or cream chees or even both, or a slice of cheese on top of a fresh babka, and a coffee. That’s just perfect. Anytime of the day!

Here is what you need:
- 20 g of yeast
- 250 ml of milk
- 70 g of sugar
- 1/2 tsp of vanilla extract
- Mix for a minute and then get the remaining ingredients ready!
- 550 g of flour and
- 65 g of soft butter
- 1 egg
- 10 grams of sugar beet syrup or honey
- 1/2 tsp of orange zest (optional)
- one pinch of salt
- (+1 egg yolk +1 Tbsp of milk – for step 3 )
2. Mix everything together and knead the dough for a couple of minutes. Cover it up with a clean cloth and let it rise for 90 minutes ( or longer) in a warm place. Once the dough has doubled in size- you can split the dough into two halves. Then take each half and make 3 separate strings out of these and braid it like I have done. Prepare a baking sheet, where you can put the two braided babka dough pieces and shape a heart out of it.
Alternatively you can just put it into a (greased) loaf pan and let it rise for another 10 to 15 minutes under a clean cloth. Preheat your oven to 170°C.
3. Separate an egg, take the egg yolk and 1 tablespoon of milk, mix that together and spread it onto the babka for a wonderful glaze. Bake for 25 to 30 minutes. Check the color! If it brownes too much – put another baking sheet on top. You can check if the babka is done by knocking on the bottom of it. The sound should be hollow.
Enjoy it warm with some fresh butter or Marmelade.
