Perfect pancakes from scratch

Who does not love fluffy, flavorful pancakes, for breakfast, lunch or even dinner?! I know, we do!

Pancakes are one of those cozy, home-cooked meals everyone should know how to do, simply because these are:

  1. easy-peasy to prepare
  2. utterly delicious
  3. can be accustomed to your taste.

I am sharing my go-to pancake recipe with you today. It’s best to whip up the batter a little bit before you actually want to bake the pancakes, since the gluten in the dough will make the batter thicker and will transform into truly fluffy pancakes- when you let it sit a little bit.

Recipe for 4 portions of perfect pancakes from scratch

  • 60 grams of butter (additional butter for the pan)
  • 500 ml of buttermilk/ 2 cups
  • 2 eggs
  • 45 grams of sugar
  • 500 grams of flour/ 2 cups
  • 2 tsp of baking powder
  • 1/2 tsp of salt
  • optional: 8 grams of vanilla sugar

Additional eqipment

Hand-mixer, 2 pans

INSTRUCTIONS

Melt the butter and add the buttermilk. This will cool down the butter and this will be a little flaky, but don’t worry. It’s all part of the plan! Add the egg, vanilla sugar and the sugar and mix it slightly. Then add the flour and the baking powder last. Mix this into a smooth batter and let this sit for about 30 minutes. The buttermilk makes these pancakes unbelievably fluffy and it even takes the baking powder taste away, due to its slight tartness. The baking powder is necessary to let the pancakes rise in the pan.

I usually use 2 pans to bake my pancakes in order to get the meal prepared faster and so that everybody will still get a warm pancake.

Heat up your pan to medium heat, add a tbsp of butter to the pan and add one big scoop of dough. According to your taste, you could now throw in- apple slices and sprinkle these with vanilla sugar and cinnamon – or add some ham and cheese and roasted pepper seasoning.

Bake from each side until golden brown. Once the edges start to brown, flip the pancake.

You can serve these with additional brown sugar and cinnacom or maple syrup, or you could even use nutella or another lovely spread on these. The opportunities are endless.
