Stroopwaffels – Caramel filled waffels

I am really sorry, I was so absent on my blog. There has been a lot going on, lately. But I am back and will show you some new recipes over the coming weeks.

Let’s start with Stroopwaffels. I have loved Stroopwaffels ever since, I was a little girl. When we visited my aunt in the Netherlands we ALWAYS got these at the store. Pretty sweet, but soo addictive. Crunchy, cinnamon-y, sweet. Just amazing!

I had never made these from scratch so far. So I was thrilled to see a recipe for these in the bakingbook from Christian Huembs, which I got for my birthday a while ago. I gave these a try, halved the recipe and added some more ground cinnamon blossoms and vanilla.

You need a specific waffle iron for these, which makes very thin waffles. I gotta say, it’s so worth it. We will make this homemade version again and again!

Stroopwaffeln

This recipe makes 14 medium sized stroopwaffels

Dough

  • 260 grams of all purpose flour
  • 70 grams of brown sugar
  • 7 grams of fresh yeast
  • 1 egg
  • 125 grams of melted butter
  • 30 ml of milk
  • 1 tsp of cinnamon
  • Pinch of salt
  • Ground cinnamon blossoms and ground vanilla beans (optional)
  1. Mix the flour, milk, sugar  and yeast and together. Add in the melted butter and incorporate.
  2. Mix in the egg, the spices & salt. Form a ball of dough and cover this in a bowl, with a clean kitchen towel.
  3. Let the dough rest at room temperature for ~ 60 minutes.
  4. In the meantime, prepare the caramel filling.

Caramel-Filling

  • 75 grams of brown sugar
  • 165 grams of agave syrup
  • 20 grams of butter
  • ¼ tsp of cinnamon
  1. Add brown sugar & agave syrup to a pan and let the sugar dissolve.
  2. Mix the butter in and stir until everything is combined and you have a golden caramel-like syrup.
  3. Form dough balls of about 30 grams and bake these in the waffle iron for ~ 2 minutes until golden brown. Press down the waffle iron, so these do not get too big.
  4. Take from the waffle iron & carefully cut the waffle in half. Add the caramel filling to it and let these cool down.  That’s it. Delicious, easy, addictive!
