Homemade Pretzel Rolls / Pretzels
Who else loves homemade pretzel rolls or pretzels- as much, as we do? Especially, when these are homemade and delicious?!?
The kids were running around in the yard, the other day, so I wanted to make them a little treat aside from the fruit snacks which I had already put out for them. My girls love to eat big, salted pretzels and so I decided to whip some up myself. You can make these vegan by using vegan butter for the recipe.
Recipe for 8-10 homemade pretzel rolls
- 20 g of fresh yeast
- 1 teaspoon of sugar
- 250 ml of warm water
Mix this together in a bowl or put all the ingredients into a mixer. And then add the other ingredients; which are:
- 450 g of all purpose flour
- 50 g of whole wheat flour
- 10 grams of salt
- 10 grams of baking malt (optional) but I always use this, since it’s making the rolls more aromatic
- 50 grams of butter
Knead the dough, cover this up under a clean cloth for 30 to 90 minutes. The dough should rise and almost double in volume. Separate the dough into 8 parts. Roll out each part into a string and fold this into pretzel. Or just shape these into a roll.
Preheat the oven to 200 degrees.
Additional ingredients
- 1 l of water
- 1 tsp of salt
- 25 grams of bicarbonate of soda
Prepare 1l of water and bring it to a boil. Then add the salt and the bicarbonate of soda (Natron). This will boil strongly now. Don’t be irritated. Take the rolls/ pretzels and put these into the hot water for 30- 60 seconds.
For the rolls: Transfer these to the baking sheet and cut some shapes on top- I cut a star onto mine. – and sprinkle some sea salt on top.

Bake for 20-25 minutes.
