Vegan melt in your mouth almond crescents
Must-bake for the christmas season
These are an absolute favorite at my house. My oldest daughter could eat these all year long and I have made these on snowy, february days before. These bring an instant smile on your face. Believe me, they do! You can easily make these vegan by using margarine or vegan butter.
When I asked my oldest daughter, what I I should bake for her birthday, Vanillekipferl was her first answer. It seemed like she did not even have to think about this. The thought had already been sitting there- waiting to be announced. 🙂
Recipe for melt in your mouth almond crescents
- 210 grams of butter
- 40 grams of brown sugar
- 30 grams of white sugar / alternatively 70 grams of white sugar
- 2 packages of vanilla sugar / 16 grams – alternatively an additional 1/2 tsp of vanilla extract & 15 grams of brown sugar
- 1/2 tsp of vanilla extract
- 100 grams of ground almonds
- 250 grams of all-purpose flour
- pinch of salt
In addition to these ingredients you still need 3 Tbsp of powdered sugar & 3 Packages of Bourbon Vanilla-Sugar for a vanilla sugar coating for the cookies for later.
We start by creaming the butter and the sugars together. Then add the remaining ingredients and mix everything with a (hand-held) mixer. I actually kneaded the dough with my hands one time, to combine all the ingredients properly, before I transferred the dough into a airtight container and stored it in the fridge for half an hour. While the dough is cooling, prepare the sugar coating for the almond crescents.
Vanilla sugar coating
- 3 tbsp of powdered sugar
- 3 packages of high quality vanilla sugar
Sieve the powdered sugar on a plate and combine this with the vanilla sugar.
Line your baking sheets with baking paper and get the dough out of the fridge again. Take one cm of dough. Roll it into a log and form the ends of the log thinner than the rest. Shape a C out of this. Transfer to the baking sheet and proceed. Forming these does take some time. But these are a classic- when it comes to cookies. Beautiful and melt in your mouth – delicious.
