Vegan Maple Walnut Cookies 🍁

♥️ This flavor combination has been something, I have been wanting to try, for a while, now. And I can say, it did not disappoint. The idea for the design came, when I was watching a re-run of How i met your mother. Don‘t know why, it just happened. ☺️I made these cookies in the spirit of Valentine’s Day. Due to this, the cookies are in a heart shape and I added a heartbeat on top of the chocolate. You could easily just use any cookie cutter and prepare flowers or other cute cookies out of this cookie dough.

This recipe can easily be prepared vegan, simply by using vegan butter or margarine.

Recipe for 50 maple walnut cookies

  • 125 grams of (vegan) butter at room temperature
  • 50 grams of brown sugar
  • 2 tsp of maple syrup
  • 1/2 tsp of vanilla bean paste 
  • 1/2 tbsp of almond milk – optional
  • 250 grams of flour
  • Pinch of salt
  • 80 grams finely chopped walnuts plus more for topping

Instructions

Start by chopping  the walnuts. Then cream the butter and the sugar together.

Add the maple syrup and the vanilla bean paste.

Add the flour and  mix everything until it forms into a dough.

Add in the walnuts and combine. 

If the dough is too crumbly, add 1/2 tbsp of plantbased mik.

Shape a disk out of the dough and transfer to an airtight container. The dough shpuld cool for at least 90 minutes, preferably longer!

Preheat your oven to 180 degrees. 

Roll out dough 1 cm high. Use your favorite cookie cutters. 

Bake for 10-12 minutes. The cookies should just slightly brown.

Let these cool down on the cookie sheet for a couple of minutes

Frosting

  • 70 grams of dark ( vegan) chocolate
  • 10 grams of white chocolate
  • Heart sprinkles as a decoration
  • Melt the chocolate in the microwave or on a double boiler.
  • Decorate the cookies with the dark chocolate, add a heart beat with white chocolate and a heart sprinkle. ♥️
