Twix Cookies

Who knew making your own Twix Cookies was that easy?! Simply prepare a shortbread dough, melt some toffee or soft caramels and top this with dark chocolate.

You can mix this up by adding salt to the caramel or to the top of the chocolate and you can decide which kind of chocolate you would go for – milk or dark chocolate. I prefer dark chocolate, since it is not as sweet and it works so well in contrast to the sweet caramel layer.

I made these quite spontaneously. I wanted to prepare a little something for our dear babysitter and could not decide, whether I wanted to make something with fruits or nuts. I went for caramel and chocolate instead. 😉

This recipe will make 65 little twix cookies

  • 125 grams of butter
  • 50 grams of sugar
  • 1/2 tsp of vanilla sugar
  • A pinch of salt
  • 1 tbsp of oatmeal / blended oats  
  • And 165 grams of flour or 180 grams of regular flour
  • 1 tbsp of milk
  • A little bit of lemon zest 

Caramel layer

  • 100 gram caramels 
  • 2-3 tsp of milk

Chocolate layer

  • 30 grams of dark chocolate 
  1. Cream the butter and the sugar. Add the remaining ingredients and mix / knead until a dough can be formed.
  2. Transfer to an airtight container and store this in the fridge for 30-60 minutes.
  3. Roll out the dough on a floured surface  – 1 cm high.
  4. Use a cookie cutter to cut out shapes of the dough.
  5. Preheat the oven to 175 degrees.
  6. Bake for 8-10 minutes, until the edges just start to brown.
  7. Heat up the soft caramels/ toffee in a little pot or in the microwave (30 seconds and then stir and check if the texture is silky enough to transfer it onto the cookie. Otherwise reheat it in the microwave again)
  8. Use the back of a little spoon to add the melted caramel to the cookie.
  9. Melt the chocolate in the microwave or over a double boiler.
  10. Add a chocolate layer on top of the caramel. 
  11. Let dry completely and enjoy.
