Melt-in your mouth-cookies, which are the perfect way to use up extra egg-yolk.

I have made an attempt at making macarons and due to this I have had some egg-yolk to spare. Don’t ask how the macarons turned out. 😉

Anyways, because of that, I have prepared these delicious and easy-peasy cookies, everyone will love. Pinky-promise. Everyone at my house, including friends of my kids, loved these and kept asking for more.

German cookies have the cutest names- the original version of these cookies are actually called dream pieces 💭 🛌.❤️❤️❤️

These are truly the best way to use up your leftover egg yolk, if you’re looking for a quick and super easy recipe. I’m telling you- melt in your mouth-cookies. Butter-y, vanilla-y…👌🤤 Perfect for an afternoon tea or coffee! Get those baking sheets ready☺️

RECIPE

125 gr of unsalted soft butter

40 gr of white sugar

2 packages of vanilla sugar

1 extra tsp of vanilla extract- optional( I just looove vanilla!)

1 pinch of salt

—- mix until creamy(1-2minutes)

3 egg yolks

—- mix these into the creamy butter, but do not overmix

80 gr of ground almonds

170 gr of all purpose flour

—- stir this in until a thick batter forms. You might need to use your hands in the end to form a big log, a rectangle made out of dough. Cover the dough into cling film and put it into the fridge for 1-2 hours. You could even keep it in the fridge over night.

—- preheat your oven to 180 degree of Celsius and cut the dough into little 1cm thick pieces. Put the dough on a baking sheet and make yourself a cup of tea or coffee 😉

—- bake for 10-12 minutes- according to your oven

—- these should just brown around the edges. Don’t overbake.

2 tablespoons of Confectioner’s sugar (in combination with 1 tsp of vanilla sugar) for dusting

Dust the cookies with confectioner’s and vanilla sugar and let these cool down for at least 10 minutes on the baking sheet. The extra heat from the baking sheet let’s the cookies firm up a little bit, which is just what we need. This is the hardest part. Smelling the yumminess and resisting to eat them all right from the baking sheet!😅
