Beautiful Apple pie
My family looves applecake. We all do. One of these last weekends, I asked my family, what they would like to have as a dessert – and of course they said apple pie.
This apple pie is such a delicious treat since it combines a crunchy crust, apples, lemon zest and cinnamon.
Instead of preparing an apple crumble, which I usually do, I prepared a beautiful apple pie, which I topped with fresh flowers. This really brings out the beauty in this cake. You can find the recipe for the apple crumble here: https://happinessineverybite.com/recipe/der-perfekte-apfelkuchen/
Recipe for 1 apple pie
- 275 grams of flour
- 15 grams of corn starch
- 50 grams of ground almonds
- 1 tsp of baking powder
- 1 tsp of lemon zest
- ½ a tsp of cinnamon
- 110 sugar
- 2 packages of vanilla sugar / alternatively 15 grams of white sugar and 1/2 a tsp of vanilla extract
- ½ a tsp of vanilla extract
- a pinch of salt
- 1 egg
- 175 grams of butter
- 3-4 medium apples
- 50-100 grams of applesauce (optional)
Instructions
Start the dough, by combining the flour, almond flour and cornstarch in a bowl. Add baking powder and lemon zest and whisk it all together. Then you can add the sugar and the vanilla sugar. You can now add the egg, the butter and the remaining ingredients. Knead the dough with your hands or with a mixer. Knead until you have a smooth dough. Wrap this up into cling film and keep the dough in the fridge for 30-60 minutes. You could keep this in the fridge longer, if necessary.
After the cooling time, you can roll out 3/4 of your dough, on a floured surface, and transfer this to a tart pan, which has been buttered before. Put the remaining dough back in the fridge, until you need this again. Use a fork to polk some air-holes into the dough. Then the steam can exit through these holes and the dough does not have to rise so much. You could now add applesauce for extra moisture and spread it onto the dough. Alternatively you simply peel 3-4 apples, cut these into slices and place them on the dough/ applesauce. Add a little more lemon zest and sprinkle with cinnamon.
Now you can preheat your oven to 180 degrees Celsius and get the dough back out of the oven. Roll out the remaining dough and cut this into stripes. Form a grid with this dough and lay it on top of the apples. You can also take a little bit of the dough and braid it. I formed two braided strings and decorated the outline of the pie with this.
Bake the pie for 35 minutes until the dough is golden brown.
This pie is served best warm – with a big scoop of ice cream. This is heavenly. And literally – happiness in every bite.
