🍒Cherry pudding coffee cake 🍒

My husband loves this kind of cake, since it‘s not dry at all, it has a crunchy crust, silky vanillapudding and juicy cherries. What‘s not to like, right? This cake is still equally delicious, one or two days after – in case it would last this long at your house. At our house it usually doesn’t 🙂

You could easily prepare this cake with other fruits, as well. So here is what you need.

R E C I P E for a brownie pan of Cherry Pudding Coffee Cake

  • 200 grams of flour
  • 1 egg
  • 55 grams of sugar
  • 5 grams of vanilla sugar
  • 120 grams of butter
  • 1/4 tsp of baking powder
  • 10 grams of corn starch
  • Pinch of salt
  1. Mix all the ingredients together until a dough is formed. Line a brownie pan with parchment paper and press the dough into the pan until you have a little crust for the filling.

Filling

  • 1 package of vanilla pudding powder
  • 500 ml of milk
  • 30 grams of sugar
  1. Bring 450 ml of milk to a boil in a pot. Stir frequently. 
  2. Mix the vanilla pudding powder, 50 ml of milk & sugar in a cup. Stir until the pudding powder has dissolved. 
  3. Once the milk is boiling, turn down the heat and pour in the pudding mixture.
  4. Stir for another minute. Set aside. 

Crumbs

  • 100 grams of flour
  • 60 grams of butter
  • 40 grams of sugar
  1. Mix the ingredients for the crumbs together with your hands until These have a crumbly structure. 
  • 1 Glas of cherries
  1. Drain the glass of cherries. 🍒
  2. Preheat your oven to 180 degrees. (Fan)
  3. Add the cooled down pudding on top of your dough. Top with the drained cherries and add the crumbs on top of everything. 
  4. Bake for 45-50 minutes.
