🍋Pistachio lemon cake 💚

This is a recipe for a small bundt cake. Perfect for an afternoon at home, when you crave something delicious and don’t expect any guests. Or if it’s just you and your best friend- then this would be the perfect little treat for you.

I have paired my slice of cake with a generous scoop of Greek yogurt and I can honestly say- I can eat this every day. This post contains affiliate links in order to support my work.

🍋R E C I P E 🍋

  • 2 eggs 
  • 100 grams of sugar 
  • 135 grams of soft butter 135
  • 240 grams of flour 240
  • 25 grams of vanilla pudding powder/ corn starch 25
  • 35 grams of pistachio butter from Prozis
  • pinch of salt
  • juice & zest from 1 organic lemons 
  • 30 ml of milk 
  • 11 grams of baking powder

Lemon glaze 🍋

  • 65 grams of powdered sugar
  • 2-3 tbsp of lemon juice
  • Crushed roasted (salted) pistachios 

Instructions

  1. Cream the eggs and the sugar until it has increased in volume and has become lighter.
  2. Add in the butter and mix again.
  3. Mix in the flour, salt, vanilla pudding powder and baking powder.
  4. Zest the lemon and add the juice, together with the milk. Combine the remaining ingredients, like the pistachio butter, until you have a smooth batter.
  5. Preheat your oven to 180 degrees.
  6. Mix the batter and transfer to a loaf tin.
  7. Bake for 40-55 minutes. Check if it is done by using a toothpick.
  8. For the lemon glaze, mix the powdered sugar and the lemon juice and drizzle onto the cake.
  9. Add some more lemon zest for extra flavor on top.
  10. Sprinkle with cut up roasted pistachios for an extra crunch.
