Pink and white Halloween cookies

I am honestly not the biggest scary- halloween decoration fan. So decorating these little bakes with pink and white ghosts or as a mummy was the perfect fit for us for Halloween. I saw  @lovelyindeed decorate some of her cookies like this  and loved the idea.

My daughter wanted to bake something last weekend and these were the perfect fit, because you simply mix everything together, bake and decorate. Easy peasy- lemon squeezy. I used white chocolate, ruby chocolate and dark chocolate for the ghosts. Let’s get baking 😉

Recipe for 24 pink and white halloween cookies (mini version) or 12 -16 larger ones

  • 250 grams of flour
  • 3 tsp of baking powder
  • 2 eggs
  • 100 grams  of soft butter
  • 55 ml of buttermilk (50 ml of milk + 1 tsp of lemon juice mixed together)
  • 75 grams of white sugar
  • a pinch of salt
  • 2 packages of vanilla sugar/ or 15 more grams of sugar + ½ tsp of vanilla extract
  • 1 package of vanilla pudding(powder)
  • ½ tsp of lemon zest

Cream the butter and the sugars together. Mix in the eggs and fold in the remaining ingredients.

Preheat your oven to 200 degrees.

Mix everything and put these on a baking sheet, using two teaspoons of the batter. You could also pipe a circle on the baking sheet with a piping bag. Leave some room between these, since the dough will spread a little bit. The baking powder will turn these into little hills. Bake these for 9-12 Minutes – according to the size of these. These should have a golden brown color.

Let these cool down on a cooling rack.

Time to decorate!

Melt 70 grams of white chocolate and 70 grams of ruby chocolate.

Spread the white chocolate on one half of the cookies and the pink one on the other half. Let the chocholate dry (in the fridge- if you are impatient like me) and then pipe the outline of a ghost on the other color. White on pink and pink on white 😉 You might have to re-melt your chocolate in the microwave or in a double boiler in order to draw the ghosts or the mummy on the cookies. At last, melt 10 grams of dark chocolate and add eyes and nose 😉

Are these cute? Or are these cute? Which ones are your favorite? The ghosts or the mummy?

Love and happiness,

Sue
