Delicious traditional tree cake bites
This is a traditional German cake, which you can not get at every bakery. The secret to the layers of the cake, which look like tree rings, is baking every single layer individually. Yeah, it takes a long time. But itâs special and such a nice treat!!! Believe me, these tree cake bites are a treat everyone will love. I used to drive around to get these at a bakery for my mom around christmas. Not every bakery still makes these, so it’s a good thing, you can make these by yourselves now.
Recipe for 1 tartpan of delicious traditional tree cake bites
- 5 eggs
- Pinch of salt
Start the recipe, by separating the eggs. Then beat the egg white and a pinch of salt until it becomes stiff. Set the egg-white aside.
- 250 gr of soft Butter
- 100 gr almond paste
- 175 gr sugar
- 2 packages of vanilla sugar
- 1/ tsp of vanilla paste
- 200 grams of flour
- 100 grams of corn starch
- 1 tbsp of cocoa
Combine the soft butter, the almond paste, the sugars and vanilla paste. Mix until creamy. Add the egg yolk and mix again. Stir in the flour and the cornstarch and combine everything. Carefully fold in the egg-white at last.
Then preheat the oven to 250 degrees, since you will need to bake the single layers at a very high temperature. Look at these layers! đ You could also just bake vanilla layers, but I really like the combination of vanilla and chocolate.
Split the dough into two and add I tbsp of cocoa to one and mix again.
Line a 20 cm tart pan with parchment paper and grease the edges. Fill in 2 scoops of dough and bake for 3-4 minutes. Until golden brown. It can burn easily, so keep an eye on the cake! After 3-4 minutes take the other batter (vanilla/chocolate/vanilla/chocolate…) and take 2 scoops of that dough and brush or spread it onto the cake. Bake again and proceed until the remaining batter is gone.
In order to add a stronger almond-paste flavor in combination with a fruity flavor, you can mix:
75 grams of apricot marmelade and
25 grams of almond paste together until smooth. Once the cake has cooled down, you can spread it on the top layer.
Melt 125 grams of dark chocolate and cover the cake with it entirely or cut triangles and cover these individually.
