Eggnog Bundt Cake

I absolutely looooove bundt cakes. These are so versatile and so delicious. I love the texture of these, since these are light and fluffy! As a base, bundt cakes have flour, eggs, sugar and butter. It’s basically bread, right? Ok, I’m stretching this a little bit. Anyways…

So today I want to introduce my eggnog bundt cake to you. The basic recipe has been given to me by a former co-worker and I have tweaked it to our taste. The beauty of this cake is the sweet flavor, the incredible texture and this amazing bright yellow color. Two thumbs up!

RECIPE for 2 little or 1 big eggnog bundt cake

Preheat your oven to 200 degree Celsius. Mix together the following ingredients with a handmixer.

  • 200 grams of powdered/cenfectioner’s sugar
  • 2 packages of vanilla sugar / alternatively you can use 1 tsp pf vanilla and add 15 grams of regular sugar
  • 5 eggs

Beat until creamy for about a minute.

  • 125 grams of all purpose flour
  • 125 grams of corn starch
  • 1 package of baking powder
  • a pinch of salt

Add all the dry ingredients and mix well. The baking powder should be folded into the flour, so it can rise the dough perfectly.

  • 250 ml sunflower oil
  • 250 ml eggnog

Mix everything one more time and do not be irritated about the moisture of the dough. The batter is very liquid-y.

Actually, I baked my bundt cake in two smaller bundt pans. You can easily bake this in a larger pan and make one big bundt cake. You just need to extend the time, according to this.

In the meanwhile, I greased my pan with butter and filled one half of the dough into each pan. Pay attention not to overfill the pans. The cake will rise quite a bit in the oven.

After 35 minutes, reduce the heat to 180 degree. Bake for 10-15 more minutes and then check the cake by using a wooden stick. Put this into the cake – if this comes out clean, your cake will be done.

Eggnog Bundt cake

Get the pan(s) out of the oven and let the cake cool down for 10 minutes, before you get them out of the pan. Then the cake should slide out of the pan perfectly.

You can decorate the cake with powdered sugar, an icing made out of eggnog and powdered sugar or simply with melted dark chocolate. Chocolate and eggnog are an excellent combination!
