Juicy Plum cake with crumble topping

I started loving plum cake, when I was a kid. We usually ate this with a big scoop of whipped cream on the patio or at a family gathering in late summer. Plum cake with crumble is a divine combination. Since plums can be rather tart, the crumble adds just the right amount of sweetness to make this such a wonderful cake.

We, lucky ones, have our own plum tree in the garden and I am already looking forward to making my first plum cake of the summer – as soon as the berry season ends and the plums are turning from green to a beautiful purple.

So let’s get started.

Recipe for one plum cake with crumble

Pie Crust

  • 285 gr of flour
  • 15 gr cornstarch or vanilla pudding powder
  • 150 gr of unsalted butter
  • 110 gr sugar
  • 2 packages of vanilla sugar (16gr)
  • ( optional 1 extra teaspoon of vanilla extract- I always take it)
  • 1 tsp baking powder
  • 1 egg
  • 1/4 tsp of lemon zest
  • Pinch of cinnamon

Mix everything in a bowl and form a ball of dough. Cover this with some cling film or store it in an airtiight container and cool the dough in the fridge for 30-60 minutes. After the cooling time, transfer it into a round, greased cooking/tart pan~ 26 cm. Use a fork to poke some wholes into the bottom of the dough. Then the dough will not rise in the oven.
You can cool the dough before transferring it to the pan, or after. When you cool the dough first, it will make it more difficult to roll it out into the pan, but it is slightly better for the dough.

  • 600-800 grams of plums

Wash and half the plums. Take the core out and lay the halfs on top of the pie crust until you see no more dough. Go crazy, these don’t need to be accurate, since those are entirely covered up by a wonderful layer of crumble.

Crumble / Streusel

  • 100 gr of flour
  • 80 gr of ground nuts( I used hazelnuts – these are a divine combination with the plums)
  • 80 gr of unsalted butter
  • 80 gr of white sugar
  • 20 gr of brown sugar — You can also just use white sugar. Then it would be 100 gr.
  • 1/2 tsp of Vanilla extract (optional)
  • 1 tsp cinnamon

Knead this together- preferably with your hands, since this creates the nicest crumbs. Then cover the plums with the crumble.

Bake in the preheated oven for 45 to 50 minutes at 180°. You should check on the cake after 30- 35 minutes and check that amazing smell coming from the oven. Additionally, you might want to add another baking paper on top of the cake, so the crumbls do not turn too brown.

Plum cake with crumble, out of the oven, served with a scoop of vanilla ice cream. Happiness in every bite. HEAVENLY.
