Mini cakes in a waffle

Since my daughter wanted to decorate something baked, these little waffle cones were the perfect fit!

These little treats are perfect for a birthday party, or when you want to bring something to school or kindergarten for a little celebration.

I made 16 waffles- since I also wanted to bake something else in addition to these. You can easily double or triple the recipe and prepare 32 or even 48 waffle cakes.

The only problem is finding these cute waffles at the store. 😀 Usually, you can find these in the sweets section of a well-sorted supermarket, though! Sometimes they keep these next to the ice cream section.

Recipe for 16 mini cakes in a waffle

  • 150 grams of flour
  • 1 well packed tsp of baking powder
  • 1 egg
  • 2 packages of vanilla sugar (alternatively 15 grams of sugar + ½ tsp of vanilla extract )
  • 30 grams of white sugar
  • 50 grams of soft butter
  • 100 ml of milk (add a couple of drops of lemon juice to the milk and let this sit for 5 minutes) This turns it into buttermilk and adds lightness to the batter
  • 30 grams of milk or dark chocolate chunks

Add everything, except the chocolate chunks, into a mixing bowl and combine with a handmixer. Once you have a smooth batter, add the chocolate chunks. Take an ice cream scoop and fill the batter into the little waffle cups. The cups should barely be half full. The dough will rise in the oven quite a bit. If you have extra dough, add this to a muffin pan and bake together with the cones. Preheat the oven to 180 degree and bake top and bottom heat for 20 minutes. Remove from the oven and transfer to a plate.

Decoration

  • 40 grams of chocolate of your choice: dark, milk or white chocolate

Melt the chocolate- over a double boiler or in the microwave and brush the chocolate on the waffle cones. Decorate with sprinkles, little cookies, chocolates or whatever you have on your hands…

These are best eaten fresh or a day after baking.
