Linzer Cookies

Melt-in-your-mouth almond crescent cookies.

These cookies are a favorite in my house and once you have tried these, you wil understand why. Linzer cookies are an Austrian tradition and these cookies are not just something you can bake for the holidays. These are lovely any time of the year! There are a couple of steps, you need to take. But these are all worth it! Don’t worry. You can thank me later 😉

RECIPE

200 grams of soft butter

90 grams of sugar

3 packages of vanilla sugar or 25 grams of regular sugar and 1,5 tsp of vanilla extract

1,5 tsp of lemon zest

1 egg

150 grams of ground almonds

250 grams of flour

A pinch of salt

50 grams of marmelade(raspberry/ strawberry or apricot)

powdered sugar for dusting

INSTRUCTIONS

Combine everything and knead the dough until smooth. Cool the dough in the fridge for about 15 minutes.

Preheat your oven to 175 degrees Celsius. Now you can roll out the dough on a floured surface. The dough should be 1 cm high. Take one cookie cutter and cut out 2 of the same cookies with it. Choose a smaller cookie cutter and cut out the middle section of your second cookie with it. I used a small heart cookie cutter for that. This is where you will see the marmelade coming throgh, later. Bake the cookies for 10-12 minutes- until the edges start to brown a little bit.

After the cookies have cooled down for a minute or two, you can take a teaspoon of marmelade and spread it onto the bottom cookie – the one- without the cutout. I prefer raspberry marmelade for these cookies. Strawberry or apricot marmelade is lovely, too! Now you can add the second cookie on top (this time- the one with the cutout) and slightly press it onto the marmelade covered cookie. You can still let these cool down a little longer and dust these with powdered sugar.

Put the cookies into an airtight container or cookie jar. These will only get better. After a day – these are even better than on the day these have been baked.
