🍋Pistachio lemon cake 💚
This is a recipe for a small bundt cake. Perfect for an afternoon at home, when you crave something delicious and don’t expect any guests. Or if it’s just you and your best friend- then this would be the perfect little treat for you.

🍋R E C I P E 🍋
- 2 eggs
- 100 grams of sugar
- 135 grams of soft butter 135
- 240 grams of flour 240
- 25 grams of vanilla pudding powder/ corn starch 25
- 35 grams of pistachio butter from Prozis
- pinch of salt
- juice & zest from 1 organic lemons
- 30 ml of milk
- 11 grams of baking powder
Lemon glaze 🍋
- 65 grams of powdered sugar
- 2-3 tbsp of lemon juice
- Crushed roasted (salted) pistachios
Instructions
- Cream the eggs and the sugar until it has increased in volume and has become lighter.
- Add in the butter and mix again.
- Mix in the flour, salt, vanilla pudding powder and baking powder.
- Zest the lemon and add the juice, together with the milk. Combine the remaining ingredients, like the pistachio butter, until you have a smooth batter.
- Preheat your oven to 180 degrees.
- Mix the batter and transfer to a loaf tin.
- Bake for 40-55 minutes. Check if it is done by using a toothpick.
- For the lemon glaze, mix the powdered sugar and the lemon juice and drizzle onto the cake.
- Add some more lemon zest for extra flavor on top.
- Sprinkle with cut up roasted pistachios for an extra crunch.
